Shepherd's Pie from Dubliner Irish Pub
Serves 6-8 people

Ingredients:
6-7 large potatoes
1/2 cup heavy cream
4 tablespoons butter
salt and pepper to taste
1/2 cup vegetable oil
2 pounds lean ground beef
2 pounds lean ground lamb
2 cups carrots, diced
3/4 cup onion, diced (1 medium)
1/2 cup celery, diced
1/2 cup Guinness
2 cups ketchup
1/2 cup frozen peas
1 1/2 cups shredded cheddar and jack cheese

Preparation:
Cut potatoes into chunks and place in saucepan. Fill with water. Bring to a boil and reduce heat to cook until fork tender. Drain well. Place potatoes in mixing bowl and add heavy cream, butter, salt and pepper. Mix until fluffy (you many need to add more cream or milk if you prefer).

In a large skillet, heat 1/4 cup oil over medium heat. Add ground beef and lamb. Season with salt and pepper. Cook meat until browned throughout and stir to combine.

Remove from heat, drain in colander and set aside.

Add remaining oil to skillet and add the carrots, onion and celery. Sauté 4-5 minutes, stir in Guinness and boil about 4-5 minutes. Add ketchup, mix well and simmer. Cook until vegetables are tender. Add meat mixture and frozen peas and stir well to incorporate. Bring back to a simmer and cook another 15-20 minutes.

Gently place meat mixture in a 13 x 9 or 9 X 11 baking pan. Leave about an inch to top mixture with mashed potatoes. Spoon mashed potatoes evenly over meat mixture and sprinkle the cheddar and jack cheese over the potatoes.

Place in a preheated 400-degree oven and bake until cheese is bubbly and golden brown, about 15 minutes.
