Salmon Boxty
Serves 4 person

Ingredients:
1 pound mashed potatoes
4 medium grated potatoes
2 ounces bacon bits
1 cup green onions, sliced
2 cups flour
2 teaspoons baking powder
2 eggs
1 pint heavy cream
1/2 bunch thyme, chopped
2 ounces butter

Garnish:
3/4 pounds sliced smoked salmon (12 slices)
1 pint sour cream
chives (diced)
salt & pepper to taste

Directions:
Preheat the oven to 375 degrees.

Mix the mashed potatoes and grated potatoes together in a bowl. Add bacon bits, green onions, flour, baking powder, eggs, cream and thyme. Continue to mix until well integrated.

Heat a skillet over medium high heat. Melt the butter in the skillet. Use a 2-ounce scoop to place the mix into the hot skillet. Brown on both sides. Remove from heat and place the patties on a sheet tray. Finish cooking in the oven for 10 minutes.

Remove the patties from the oven. Top with sour cream. Fold the smoked salmon slices into roses and place one on top of each patty. Sprinkle with chives, salt and pepper and serve.
