Fig and prosciutto pizza

Ingredients:
8 oz. pizza dough
flour
2 teaspoons olive oil
1/4 teaspoon minced garlic
1 pinch kosher salt
1 pinch black pepper
1/2 teaspoon chopped fresh rosemary
1/4 cup fig jam*
2 ounces gorgonzola cheese, crumbled
1 ounce fontina cheese, shredded
1 1/2 ounces thinly sliced prosciutto
1/2 scallion, sliced lengthwise into thin ribbons
Directions:
Preheat a baking stone in a 500-degree oven for one hour.
Dust a countertop with flour and roll out one pizza dough as thinly as possible. Cover the pizza with olive oil, garlic, salt, pepper and rosemary. Evenly dot fig jam on the pizza, then cover with gorgonzola and fontina cheese. Be sure to leave an outer lip of 1-inch all the way around the pizza.
Bake the pizza on top of the pizza stone in a 500-degree oven for 6-8 minutes, or until the pizza is cooked to desired doneness. Remove from the oven and top with prosciutto and scallion ribbons. Cut into slices and serve immediately.
* Fig jam can be found at some grocery stores and gourmet food shops
