Raw vegan pasta carbonara from Hippocrates Health Institute
Serves 4-6 people
Preparation time: 15 minutes

Pasta:
4 zucchini, spun into noodles
1/2 cup snipped Applewood smoked dulse*
1/2 red onion, julienne slices
1 red bell pepper, julienne slices
1 cup English peas

Sauce:
2 ounces lemon juice
1 1/2 cloves garlic
1/2 tablespoon kelp powder*
1 tablespoon frontier pizza seasoning**
1 1/2 cups pine nuts, soaked in water overnight
1/2 cup macadamia nuts, soaked in water overnight
1 1/2 ounces olive oil
Water as needed

Directions:

Soak pine nuts and macadamia nuts in cold water overnight. Rinse and strain the nuts and set aside for the sauce.

Make spaghetti –shaped noodles from the raw zucchini using a turning vegetable slicer. You can also make flat noodles using a mandolin slicer. Mix the desired amount of sliced onion, red pepper, peas and dulse with the noodles.

To make the sauce, combine all ingredients in a blender. Add enough water to cover the top of the nuts. Blend until the sauce is thick and creamy.

Add as much sauce as desired to the noodle mixture. Serve and enjoy.
